
Saturday, having a surprise day off due to snow, I learned a hard lesson. While baking bread on a baking stone, DO NOT PUT A STEAMING PAN OF WATER ON THE RACK BENEATH IT! I did that and wound up with a baking stone broken into about 10 pieces! I’d had that stone for probably 10 years and it was perfectly seasoned, being well used. I was making a very large loaf much like the one pictured here and wanted a crisp crust. The water was placed in the oven to accomplish that. I heard a “pop” and found the stone broken. *sigh* I scooped the lot onto a flat baking sheet and then onto another and placed it back into the oven. The bread came out alright. The stone is now trash in the garbage bin. *sad face*
