Soupe du jour


Chicken & Barley Soup
(serves 4)

4 cups chicken broth
1/2 cup pearl barley
1/4 teas. dried basil
1/2 cup chopped celery
1 cup chapped carrots
1/2 cup chopped onion
1 cup chopped mushrooms
1 cup cooked chicken - diced

In large saucepan, simmer broth, barley, basil, celery,
carrots, and onions together until barley is tender.
(about 1 hour) Add mushrooms and chicken and
simmer about 15 minutes until hot. Add salt and
pepper to taste.
