Puff Pancake

I’m sharing one of my favorite recipes:

Ingredients:

2 TBS butter or margarine
3 eggs
3/4 cup milk
3/4 cup all-purpose flour
2 teas. sugar
1 teas. ground nutmeg

Confectioners sugar for sprinkling

To prepare:

Place butter in a 10 inch cast iron skillet and place in a preheated 425 F oven for 2 – 3 minutes or until melted.

Place the eggs, milk, flour, sugar, and nutmeg in a blender; cover and process until smooth.

Pour into hot skillet.  Bake uncovered at 425 F for 16 – 18 minutes or until puffed and browned.

Dust with sugar, slice into wedges, serve with apple butter or syrup.
